Frantz Saumon's winery is carved is an underground cellar carved into the tuffeau, all the wines are vinified in barrels, only with indigenous yeasts. Frantz entered the world of winemaking in 2002 after a stint with the natural wine champion, Christian Chaussard of Domaine le Briseau.
All of his sparkling wines are pétillant naturel.
Frantz used to be a forester in both Canada and France for several years.
