For Julien the cellar is seen as a place to experiment and create. L'Ecume is an ancestral method sparkling made from Aligote and gamay. Bottle aged for 6 months before disgorgement. Red fruit on the nose and palate alongside stonefruit.
A juicy pet nat with a super refreshing acidity. Peachy, brioche and moussey.
