Ancestral Method
It is said to be the oldest method of producing sparkling wine. Primary fermentation is stopped before it’s completed, a secondary fermentation occurs in the bottle which ends when the yeast cells deplete the supply of residual sugar. There is no dosage, or sugar addition, to kick-start the secondary fermentation. Afterwards, the wine is not disgorged to remove any remaining sediment or lees.
